Is there anything sweeter than those ripe red strawberries? They are one of our absolute favorite parts about summer! Straight from the vine or served any number of ways, they are just delicious!
We’re very fortunate to have some really great “U-Pick” strawberry farms in our area and I’m even more fortunate that my kids love picking them! This year we picked nearly 40 pounds of ripe red berries. Forty pounds! That’s a lot of strawberries! And yet we could have easily picked another 40 pounds without any of them going to waste!
We each have our favorite strawberry recipes and we wanted to share them with you!
Five Favorite Strawberry Recipes!
1. Jam. Jam. And more JAM!
My oldest daughter would eat PB&J sandwiches every day. But only with homemade strawberry jam. Store-bought jam just doesn’t compare for her. So we are sure to save a good portion of our strawberries just for jam.
We make freezer jam because it’s just plain ol’ easy and we have the freezer space for it. I’ve always used the classic Ball® Strawberry Freezer Jam recipe, as well as the low-sugar version of the recipe, and it always turns out great. But there are so many ways to make jam (all of them pretty much the same) or you can experiment with adding different fruits with your strawberries. Lots of options. Lots of fun!
2. Strawberry Shortcake
This is another no brainer when we have fresh strawberries in the house and this one is my youngest’s pick!
Again, like jam, there’s probably a hundred different ways to make strawberry shortcake but we’re a fan of the Classic Strawberry Shortcake from Betty Crocker (show above). It just reminds me of being a kid and everything great about carefree summers!
Another delicious twist on the strawberry shortcake is the Strawberry Shortake Cake from The Pioneer Woman. So, so good!
3. Fresh-Fruit Strawberry Pops
Popsicles are a summer staple in our house. Rarely could you open our freezer during the summer and not find popsicles. They are just such an easy treat to give the kids on hot summer days.
These Strawberry Pops are a super easy and super yummy popsicle option and are my other daughter’s pick for the list! I love that all you need are fresh strawberries, a food processor, and some sort of popsicle mold. And when I say “popsicle mold”, that’s a pretty loose term. Whether you have fancy popsicle molds or little cups and sticks….it really doesn’t matter! Because it’s all about the strawberry frozen goodness.
Basically just wash and hull your strawberries and then cut them into halves. Puree your strawberries using your food processor or blender and then pour into your popsicle molds. We like to chop up a few extra strawberries and put the chunks in the popsicle mix for a little extra fun. Freeze and enjoy! So fun!
4. Strawberry Ginger Lemonade
If you love strawberry lemonade, you’re going to really love Strawberry-Ginger Lemonade. My husband is always super excited to see this in our fridge! It’s so good! A little more labor-intensive than your regular lemonade or strawberry lemonade but, again, worth it! And it’s a fun surprise for those summer BBQ guests!
5. Strawberry Salad with Warm Goat Cheese Croutons
I couldn’t end this list without one of my favorite ways to eat strawberries….salad! Plus, I figured you guys might want something other than a desert 😉
Just as we have all these great strawberries right now, our garden and farmers’ markets are busting with a variety of amazing veggies to go with them! And fresh strawberries on a salad is just about the best addition to any meal!
Most days I’ll just toss them in with whatever salad I’m eating but this salad is one that you should definitely make. It’s one of my favorites for when we have friends over for dinner or when I just feel like really indulging in a salad. I leave you with the Strawberry Salad with Warm Goat Cheese Croutons.
