I don’t remember which of my 4 brothers it was that sat in his highchair and said, “I want another choco ball” with peanut butter and chocolate oozing from his mouth, but we have fondly called them that ever since…minus drooling. I can’t think of Christmas without chocolate peanut butter balls. My friend Jenn shared this recipe with me last year and it’s my new favorite. Sorry mom!
Crispy “Choco Balls”
1 stick butter softened
2 2/3 cups powdered sugar
2 cups peanut butter
3 cups rice krispies
Mix ingredients together (mixer, hands, or whatever works best for you) and form into balls. (I rolled in my hands to form balls) Then dip into melted chocolate and chill.
(If you are like me, you might need to know how to make melted chocolate. I have a terrible time with it seizing on me –turning into a rock of chocolate– because I can’t remember to keep all water away from it when melting.)
Combine 1 1/2- 2 cups chocolate chips and 1 Tablespoon oil in a microwave safe bowl. Melt on defrost or lower temp in 1 minute increments to avoid burning the chocolate. When it’s smooth to stir you are ready to dip your choco balls.
When you get tired of rolling and dipping balls use half the peanut butter mixture….smash it into an 8×8 pan and drizzle chocolate on top. Chill and cut.

November 21, 2012 at 7:32 pmExactly Heather. I prefer them with the rice krispies now. However, we are a divided house, my husband likes them without the crunch. Easy enough to make his first and add the krispies for mine! 🙂

November 21, 2012 at 12:10 pmNee, I just use generic peanut butter, whatever is on sale. 🙁 Renee might know the answer better then I do. I would guess they would turn out just fine with BETTER peanut butter. If the all natural has more oils you might just use a bit more of the powdered sugar or rice krispies so they aren’t too wet to roll and coat.
