This is such a delicious recipe for those beef roast leftovers! Most of the time when I’m picking out a chuck roast, I try to go for the biggest one that I can find with bone in, so I can have leftovers enough to make this recipe 🙂
This is actually a spin off on what I grew up on changing up the ingredients a bit to “real foodify” them!
You can certainly pile this on some delicious sourdough, sprouted or homemade soaked tortilla, or homemade soaked bread for sandwiches, but if you are on a grain break you could enjoy this on top of a baked potato, or just in a bowl with a topping of whole sour cream!

You’ll need:
3-4 cups shredded cooked beef leftover from your roast
½ onion, chopped
3 cloves garlic, minced
3/4 cup organic ketchup (Watch ingredients! No HFCS!)
1 1/2 TB organic blackstrap molasses (ours is cheaper local but HERE is what it looks like)
2 TB organic mustard (Watch ingredients!)
2 tsp honey (this will be heated up pretty good so don’t worry about it being raw – a good organic is fine to save on money)
¼ tsp chipotle powder (If you like more heat go for more! My girls will eat this recipe as is so it’s pretty light on the heat. My hubby always adds more to his!)
1 tsp sea salt
2ish TB of leftover roast juices, beef stock, chicken stock, or just water
1 TB apple cider vinegar (this will be heated up pretty good so don’t worry about using raw ACV – a good organic is fine to save money, although Bragg’s is pretty cheap anyway!)
- Everything into the crockpot, mix up, and cook on low for 4 hours, or high for 2 hours.
Kitchen Tips:
- You could make this out of a chuck roast that hasn’t been cooked yet if you want more – just follow the crockpot roast recipe and about halfway through add the bbq sauce ingredients. When the roast is done, pull it apart with a fork in the crock pot and mix up with the sauce/juices.
- You could use garlic and onion powder vs fresh if you don’t have them on hand.
- If the sauce feels runny add a little arrowroot powder to thicken it up.
- If you need a sweeter bbq sauce just add more of the honey or back off on the chipotle.
- You can make up the bbq sauce separately before you put it in the crockpot to be sure it is the flavor you like and/or the amount you want. You can see from the pictures how saucy mine is so you can add more or less depending on your preference!

January 17, 2013 at 12:52 pmMy family tried this, this past week with canned venison. They all liked it, even the “picky child” ate her whole sandwich. We did everything the same except a little less garlic and we didn’t have any chipotle powder. We used the “juice” from the canned meat. It was a big batch so there was enough leftover to freeze for another meal in a couple weeks. Thanks for the recipe!!
