Birthday parties, family gatherings, parties…it’s good to have something in your real food arsenal to keep the kids happy and not feeling deprived for special occasions – but also not rely on the Crisco laden, or store bought mile long list of ingredient treats.
- 1 cup natural peanut butter (Watch the ingredients – no sugar, HFCS, or strange oils added – just peanuts and maybe salt is all it should need to be. If nut free try sunbutter, but again – watch the ingredients.)
- ¾ cup pure cane sugar (or you could use sunacat but buzz it in the blender first to make it finer in texture like sugar)
- 2 TB maple syrup
- 1 egg, beaten (If egg free use an egg replacer or flax egg)
- 1 tsp vanilla extract
- ½ tsp aluminum free baking powder
- 1/3 – ½ cup quality chocolate chips (watch the ingredients – no HFCS or soy – Enjoy Life is a good brand)
- Mix all ingredients together in a small mixing bowl.
- Roll into balls and place on a silpat or parchment paper lined baking sheet and press down or use a fork if you want the cross hatch markings.
- Bake at 350 degrees for 10 minutes.
- These freeze up great – batch them up for impromptu kids coming over after school or sleepovers so you can just pull them out.
- You can leave out the chocolate chips if you want, or add raisins.
