a simple real food recipe :: homemade potato chips

Ingredients
- Potatoes sliced thin – enough to feed your crew (I usually do 3. Russets are the “usual” potato used for chips but I get whatever is on sale)
- ¼ to ⅓ cup friendly fat to cook in (Pastured lard, butter, coconut oil. I like frying in lard the best or a combo lard and butter)
- Sea salt/pepper to taste
Instructions
- Get the friendly fat nice and hot and lay the potato slices down in a single layer. I usually have to do a few batches in my fry pan so they aren’t crowding.
- Flip them after a few minutes and cook until they are browned.
- Season with salt/pepper to taste after transferring them out of the pan.
Kitchen Tips:
- If you are using lard be sure you are getting it from a trusted farmer that is pasturing their pigs. I love keeping lard around for cooking in not only because it cooks well and is affordable, but because it is LOADED with nourishing vitamins and fats. Butter and coconut oil work fantastic too.
- The chips will be crispiest the thinner you make them. I can get a pretty good cut with just a good knife as I don’t have a mandolin, but one of those would work great!
- If I’m planning on the chips for dinner I do usually make them up ahead of time – they are just as good cooled off as they are straight out of the pan. Leftovers are great for lunchboxes as well!
