You may be sensing a trend here. I LOVE my mom’s cooking. I have been using many of her recipes for most of my married life. And because {truth be told}, she loves her cooking too, I have been able to convince her to let me share her recipes. With YOU, our loyal SIMPLE readers (feel free to thank her anytime). This past week, I was lucky enough to have her in the flesh for three solid days (almost 4). We cooked (ok, mostly she cooked and I helped (aka observed)), we drank wine, and we giggled over our many inside jokes. I LOVE MY MOM. I am so grateful to have her in my life, both for her amazing qualities as a mother and friend and for her ability to turn any dinner into an event with her marvelous meals. So without further adieu, my mom’s amazing, un-rivaled lasagna recipe ::
Cheese mixture:
1 large container ricotta cheese (32 oz)
1 lb. bag mozzarella cheese
1 egg
1/2 cup milk
Sauce:
3-4 Tbsp olive oil
1 6 oz. can tomato paste
1 big can crushed tomatoes
2 tsp. Italian seasoning
1 small onion (diced)
1 clove garlic (diced or minced)
1/2 cup white wine
3/4 cup water
1 box lasagna noodles
Cooking Directions:
Make the sauce. Boil the noodles. While noodles are cooking, combine cheese mixture. Add enough milk so the mixture is smooth and creamy and spreadable (use your best judgment). When noodles are cooked, drain and rinse to cool. Put a layer of sauce on bottom of a 9×13 pan and begin layering, starting with noodles and then cheese. Sprinkle Parmesan cheese on alternate layers. End with a row of noodles on top. Add another layer of sauce and Parmesan cheese on top. Cover with foil and bake at 375 degrees for 30 minutes or until hot and bubbly!!

October 19, 2013 at 3:37 pmNeedless to say I love my daughter!…..not to mention the three beautiful grandchildren she gave me…….and also because she thinks I’m wonderful!….what mom wouldn’t happy to have such a daughter? This recipe can be varied to include chopped spinach in the cheese mixture…..or add meat or sausage to the sauce……or you can use jumbo shells to make stuffed shells…..no matter it is an Italian comfort food like no other!! Mangia!
