Do you ever get to the point with vegetables where you know you need to eat them but are just sick of steaming them and throwing some butter in for flavor? This recipe is another one I discovered early on in my marriage (13 years ago…wow!!) on allrecipes.com. My husband and I both love asparagus but wanted to find a way to make it even better. I have not made it another way since. Even people who don’t normally like asparagus LOVE the way it tastes. It is fast, easy, and honestly kind of fun to make. Bottom line: little effort, big results.
Ingredients ::
1 lb. asparagus
1/4 butter or margarine (I usually use Brummel & Brown, which is a yogurt based spread and it is delish!)
3 cloves garlic, chopped finely or minced
1-2 Tbsp olive oil
1 tsp salt (use more or less based on your tastes)
1/4 tsp pepper
Cooking directions ::
Melt butter in large skillet over medium-high heat. Add the olive oil, salt and pepper and stir the mixture. Add the garlic and stir once more. Cook garlic for a minute or two but don’t let it brown. Turn down heat if necessary. Add asparagus and cook for 7-10 minutes. (We like our asparagus a little on the al dente side so I usually only cook it for 7 minutes but if you like it softer, you will want to cook it for the full 10 minutes.)
This recipe is great with chicken, fish or steak. The last time I made it I used 2 pounds of asparagus and it was still gone by the end of the meal. So tasty! Feel free to comment with changes or suggestions….I am always looking for ways to make my favorite meals better!
