a simple recipe :: the easiest and best burritos ever

Confession: I am all about easy. Fast. SIMPLE (fitting, right??). If I can feed my family with a meal that takes less than 20 minutes to prepare, I am in chef heaven. My recipe box is full of recipes that I never use because they are either too time consuming or have too many ingredients. Over the years I have amassed a fairly short list of favorite recipes, a few of which I have already shared here. This is one that my sister gave me after she had it at a friend’s house and asked for the recipe to take home. I made it once and fell in love. It is one of those meals that tastes like it took much more effort to prepare than it actually did. Without further adieu…..Jodi’s Easy Cheesy Burritos!

Ingredients ::

1 lb. ground beef
1-2 10 3/4 oz. cans condensed tomato soup
1 pkg tortillas (10 count)
1 pkg taco seasoning
1 bag shredded cheese

Cooking Directions ::

Preheat oven to 375º. Brown meat. Add taco seasoning and water according to package instructions. Cover bottom of 9×13 inch baking dish with a thin layer of tomato soup. Spoon meat mixture into each tortilla and roll up, placing open section on bottom to keep meat inside. Cover with a layer of tomato soup, spread cheese on top and bake for 15-20 minutes or until cheese is melted and bubbly. Serve with Spanish rice or chips and salsa. Dinner is served!

    I have a newborn daughter and a husband who loves mexican food. This recipe would make him happy and it would hopefully be easy to make with a little baby around.
