coconut oil & cream cheese banana bread recipe :: karoun cheese review

I love Banana Bread. I have to bake it and give it away as soon as possible or I will eat an entire loaf solo, unaccompanied, by myself, unassisted. You get the point. I stumbled upon a coconut oil recipe last year and tweaked it to make it my own. Karoun honey greek yogurt is my secret ingredient. Not so secret now, since I shared it in the recipe below.

Coconut Oil Cream Cheese Banana Bread

Serves: 1 loaf
Ingredients
  • ½ cup coconut oil
  • ½ cup cream cheese
  • ½ cup greek yogurt with honey
  • 1 cup brown sugar
  • 1 egg
  • 2 brown bananas
  • 1½ cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
Instructions
  1. Sift dry ingredients in a bowl and set aside.
  2. Beat coconut oil for 3 minutes.
  3. Add cream cheese and greek yogurt and beat 3 more minutes.
  4. Add sugar and mix until fluffy (about 5 minutes).
  5. Add bananas and beat well.
  6. Mix in egg and dry ingredients. (Try not to mix too long, but be sure it's all incorporated or your bread will fall when it cools.)
  7. Pour into a greased loaf pan and bake at 350 degrees for 45-55 minutes. Check with a toothpick, the middle takes a while to bake. Add 5 minutes and check again if it's fully baked.
Notes
There are a few substitutions you can make. You can use 1 cup of cream cheese instead of greek yogurt. You can also use ½ a cup of cream cheese and ½ a cup of kefir cheese spreadable yogurt (lite or regular).

karoun review
My family tried {and loved} quite a few Karoun Cheese products. We were thrilled they provided lots of samples for the purpose of this review. Our favorite was the braided Olive Oil and Garlic cheese. We snacked on it after school as well as had it as a side at dinner. It reminded us of eating the best part of stuffed crust pizza without all the guilt of eating pizza. I enjoyed the Breakfast Cream each morning. I had never heard of it, but it tasted mighty fine on scones as well as an English muffin with strawberry jam. The spreadable yogurt cheese was also a new item to our household. If you want a lighter version of my Banana Bread, I baked it successfully with 1/2 a cup of lite kefir cheese and 1/2 a cup of cream cheese. This information is in the notes section of the recipe if you print it out. The regular kefir cheese works as a substitute too.

Look for Karoun products at your local grocery store. Be sure to pick up the Greek Yogurt with honey so you can wow your friends with moist, sweet, dense, delicious banana bread too.
