Ok friends. For real. It’s almost over.
You know…winter. We are *so* close to spring! Can you feel it?!
Thought I would give you a taste of impending warmer weather with a salad dressing.
a simple real food recipe :: fiesta salad dressing and sandwich spread

Ingredients
- 1 cup organic salsa
- ½ avocado
- Juice of ½ lemon
- ⅓ cup whole sour cream (If you are dairy free you can leave this out and it will still be good – you could add more avocado for more creaminess)
- 2 tsp taco season (I use my homemade blend listed in the Kitchen Tips section – if you are using season from a packet you may want to start out with 1 tsp and add more to taste)
- Water to thin out to desired consistency
Instructions
- Blend everything up except the water until smooth.
- Add water to make the dressing as thin or thick as you wish. If you are using this for a sandwich spread you probably don’t want to add any water.
- HERE is my taco season blend. No MSG, preservatives, or crazy starches! And stuff you probably already have in your spice drawer.
- You can use whole milk yogurt vs the sour cream if you want.
- This amount makes 1 pint jar and should be used within a week or so. You can freeze half of it if you don’t think you will use all of it in that time. We certainly do and very often I double batch this.
- I just use my Magic Bullet for the blending!
- The dressing works great as a sandwich spread, mixed in with shredded chicken to make chicken salad, etc!
