Yes, you know what I’m talking about. And I’m sorry if I just dissed your favorite drink, but the taste of coconut water just is not refreshing or yummy to me at all.amy

I, now, introduce you to Amy & Brian’s Coconut Juice! Amy & Brian’s coconut juice is 100% pure young coconut water. Their coconut water is the water from young, green coconuts. This my friends has a unique flavor that I can say is yummy. It is refreshing and very light. With a total of 120 calories and zero fat for a whole can of this juice.

I’m sure you have all heard great things about coconut water and how it is really good for you. There are several benefits to drinking coconut water everyday, such as boosting hydration and reducing blood pressure.

Coconut Juice Hot Chocolate
Ingredients:
2 cans of Amy & Brian 17.5 oz Coconut Juice Without Pulp
2/3 cup cocoa powder
4 Tbsp maple syrup
1 tsp vanilla

Directions:

1.  In a pot over the stove, add all ingredients and turn heat on medium-low
2.  Whisk ingredients together, quickly, while they warm. Once ingredients have dissolved heat to desired temperature and serve.

Coconut Juice-Infused Rice
Ingredients:
20 oz of Amy & Brian 17.5 oz Coconut Juice [With or Without Pulp]
1 tsp salt
3/4 tsp sugar
1 cup long grain white rice
3 Tbsp fresh cilantro, chopped

Directions:

1.  In a saucepan, combine Amy & Brian Coconut Juice, salt, and sugar. Bring to a boil. Add the rice, stir well, and reduce heat to medium-low. Cover and simmer undisturbed until the liquid is absorbed and the rice is fluffy, about 20-25 minutes. Remove from heat and let sit without stirring for 10 minutes.
2.  Fluff with a fork and add the cilantro. Adjust seasoning to taste. Serve hot!

Chocolate Chip Coconut Juice Cookies – *gluten-free, dairy-free, low-glycemic
Ingredients:
2 1/4 cups coconut flour
1/2 tsp baking soda
1 1/4 cups coconut oil
2 oz of Amy & Brian 17.5 oz Coconut Juice With Pulp
1 1/2 cups coconut palm sugar
1 tsp sea salt
2 tsp vanilla extract
2 large eggs
2 cups dark chocolate chips

Directions:

1.  Preheat oven to 350 degrees.
2.  In a small bowl, whisk together the coconut flour and baking soda; set aside.
3.  In a food processor or blender, combine the coconut oil and coconut palm sugar. Blend on medium speed until mixed well.
4.  Reduce speed to low and add sea salt, Amy & Brian Coconut Juice, vanilla extract, and eggs. Beat until well-mixed (about one minute).
5.  Slowly add flour/baking soda mixture until combined.
6.  Stir in the chocolate chips.
7.  Drop tablespoon-sized balls of dough 2 inches apart on a baking sheet lined with parchment paper.
8.  Bake until cookies are golden brown, approximately 15 to 17 minutes.
9.  Remove from oven and let cool on baking sheet one to two minutes.
10. Transfer cookies to a wire rack and let cool completely.

    Interesting product. I’ve heard a lot about coconut water, but I’ve never seen recipes for it to be used in cookies and hot chocolate before!
