My oldest daughter is an extremely picky eater. She has an especially limited spectrum when it comes to school lunches. Every month we sit down and look at the lunch calendar and circle the days when they are offering something that she likes. Usually there are only 2 or 3. Most other days she will eat a bagel with some fruit and maybe some goldfish crackers. Not the worst thing ever, but I am always looking for something easy to put in her lunch box that gives her more variety. I found this recipe on my go-to, Allrecipes.com and tweaked it using some of the suggestions in the reviews. It is so easy and I am crossing my fingers that it becomes a lunchtime favorite! Ingredients ::
2 Golden delicious apples, cored and thinly sliced
2 tsp. cinnamon sugar
Cooking Directions ::
Preheat oven to 225º.
Put apple slices and cinnamon sugar in a ziplock bag along and shake until the apples are coated.
Spray cookie sheet with cooking spray.
Line apples on cookie sheet.
Bake for 1 hour until the edges of the apples curl slightly.
Let cool.
Eat and enjoy! Hooray for back to school!
