We all love the holidays and the wonderful treats everyone bakes and shares. I had to share this super easy recipe for a quick treat.
I have only heard of this around Christmas time but I do feel it needs to be all year long. It’s that good. So, therefore, we will call it Chocolate Saltine Toffee aka Christmas Crack.
Ingredients:
- 1.5 sleeves of saltine crackers
- 2 sticks of butter
- 1 cup soft light brown sugar, packed
- 2 cups chocolate chips
- 1/2 to 1 cup of your favorite topping, chopped pecans, M&M’s
Pre-heat oven to 325 degrees.
Line a large jelly roll pan with aluminum foil. Spray the foil with non-stick cooking spray and then line the pan with saltine crackers.
Place the butter and sugar in a medium saucepan over low to medium heat. Stir until the butter is melted. Once the butter is melted, bring to a boil for 2-3 minutes. Stir constantly.
Once it’s nice and bubbly, remove pan from heat and pour evenly over crackers. Spread mixture with a spatula…doesn’t have to be perfect though. Do this quickly so the toffee doesn’t harden.
Put the pan in the oven and back for 6-8 minutes. The mixture will spread evenly over the crackers as it bakes.
Remove the pan from oven and then sprinkle the chocolate chips on top of the toffee while it’s still hot. Let the chips melt for a few minutes and then spread all over the toffee with a spatula. You can then sprinkle on any extra topping you would like or just leave it as is. (My favorite way to have it.) You then, put it in the freezer for 30 minutes. Once the chocolate has hardened, break pieces off till done. Put in a baggie or container, it will last for 1-2 weeks like this.
