a simple recipe :: our favorite apple crisp {free of dairy, egg, soy and nuts}

We are so lucky here in Michigan. While our winters might be a turn-off for some people, we have a pretty gorgeous fall full of apples, pumpkins and other amazing fall crops. On a recent trip to the apple orchard, we came home with tons of fabulous apples. And while we’ll eat most of them as is, I couldn’t help but whip up a batch of apple crisp. We love it for dessert but also love to add a scoop in our oatmeal in the mornings!

This particular recipe is free of dairy, egg, soy and nuts. Sub out the flour for a gluten-free blend to easily make a gluten-free version.

Ingredients for the filling:  10-12 cups of sliced apples (peeled or not, that’s totally up to you), 1/2 cup white sugar, 1 Tablespoon flour, 1/4 cup water, 1 teaspoon cinnamon, a pinch of nutmeg.  Place sliced apples in a 9 x 13 pan.  Combine sugar, cinnamon, flour and nutmeg and sprinkle over apples.  Pour water over top.

Ingredients for topping: 2 cups oats, 2 cups flour, 2 cups packed brown sugar (I usually use a bit less-feel free to cut back on the sugar if you can!), 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1 cup Earth Balance (or other dairy-free butter substitute).  Combine dry ingredients (oats, flour, sugar, powder and soda) and cut in the butter until mixture is crumbly.  Pour topping over the apple mixture.

Bake at 350F for about 55 minutes or until top is golden brown.  Serve alone, top with ice cream or add a scoop to your oatmeal!  I hope you love it as much as we do!
