a simple recipe :: cinnamon candied almonds

I’ve found one of my new favorite snacks!  We always try to have almonds and cashews around for snacks, but I recently was introduced to a new way to snack on almonds, and I just have to share this quick simple recipe with you all!  These cinnamon almonds make the perfect snack, a delicious topping for ice cream or yogurt, and are a wonderful addition to salads.

Cinnamon Candied Almonds

Ingredients:

2 cups almonds

1 egg white

1/2 teaspoon vanilla

1/3 cup brown sugar

1/3 cup sugar

1 teaspoon cinnamon

Preheat oven to 300 degrees. Line cookie sheet with parchment paper.  In small bowl whisk together egg white and vanilla.  Whisk until mixture forms a soft peak or is frothy.  Pour mixture over almonds and stir to coat.  In a separate bowl mix together sugars and cinnamon.  Add to almonds and stir to make sure almonds are evenly coated.  Spread almonds on lined cookie sheet. Bake at 300 degrees for 15 minutes.  Stir almonds and bake for an additional 15 minutes.  Let cool completely.  Store in an airtight container.

This recipe works well with cashews and pecans as well!  I love that this is a versatile snack and topping to different foods!  We had it this weekend on grilled peaches and vanilla ice cream, as well as on a salad with veggies from our garden!  I also think it would make a great addition to a trail mix or party mix.
