a simple real food recipe :: alfredo sauce :: dairy free option

Here is a great little recipe for a sauce you can use on just about anything!

Fancy dinner at home? Perfect.

Special birthday or Valentine dinner for the kids? Absolutely.

Weekday dinner made delicious? YEP!

I usually use this sauce on top of a load of stir fried veggies and chicken. You can do traditional pasta (I usually stick with rice pasta), or use spaghetti squash “noodles”, zucchini or yellow squash “noodles”, rice, or quinoa.

(Dairy free? Try this recipe from Grass Fed Girl! Looks great! I have not tried it but I really trust this source! And I’m thinking the coconut flavor will be masked with garlic if you choose!)

You’ll need:

  • ½ cup sour cream (Go with full fat – I like Daisy since it isn’t ULP and doesn’t have any other added ingredients. Check your labels – all you need for sour cream is cultured cream)
  • ¼ cup butter
  • ½ cup whole milk (avoid ULP and stick with organic)
  • 1 – 2 cloves garlic
  • ¼ – ½ tsp sea salt
  • 1 ½ -2 TB arrowroot dissolved in 1 TB water
  1. In a sauce pan melt the butter and sour cream together over a medium/low heat.
  2. Add the milk, garlic, and salt and heat through same medium-ish heat. Give it a few minutes to let the garlic infuse the sauce.
  3. Pour the arrowroot/water mixture in to thicken. It will NOT thicken right away. Keep the heat at medium and keep stirring a few minutes. You can add more arrowroot/water mixture if you need. Let it sit off the heat and see how it thickens. Sometimes it just needs that 1 TB to get thick and other times it takes a little more. It isn’t as fussy as I’m making it sound – just play around with it.

Kitchen Tips:

  1. I usually double batch this and freeze up half! It’s an EASY pull out of the freezer and warm up for dinner sauce!
  2. Play around with the garlic – alfredo is typically garlicky and I LOVE my garlic – you can start with 1 clove and add the other if you think you want it or leave it as is 😉
