a simple {real food} recipe :: blueberry coconut popsicles

Not sure what it is about the weather here in Michigan, but from what I have been told, it has just the perfect conditions for strawberries, blueberries, and cherries. The strawberries are on their way out, and this week started the blueberry season!

Chloe and I took a morning off together to gather blueberries at a local U-Pick. The weather was perfect, and she was in HEAVEN 🙂  Pretty sure it went something like put a few in the bucket, put a handful in her mouth…we had fun!  And we gathered a little over 2 pounds in less than an hour, which was about her attention span at the age of 3!  And at a little over $4 for all that, you can be sure we will be back a couple more times this season – and most likely attempt bringing little sister next time!

                                  

We will freeze half, share some, bake with some, and munch on the rest! After washing them up (diy fruit and veggie wash recipe is coming soon!), Chloe and I decided to blend a few handfuls up for some popsicles she could enjoy after naptime…because she probably didn’t have enough blueberries already 🙂

Here’s what you’ll need:

1 ½ cups fresh blueberries

1 cup coconut milk (Or THIS is a good brand in a BPA free container!)

2 TB raw honey (Local if you can find it! If not this is the brand I use!)

½ tsp organic vanilla extract

  1. Blend ingredients until smooth. This all fits in my Magic Bullet – nothing fancy here!
  2. Pour into popsicle molds or paper cups with sticks.
  3. Freeze a few hours before eating.

Tips from my kitchen to yours:

  1. Optional add-ins to bump up the nourishment (just a TB of any!):  flaxseed meal, chia seeds, yogurt, coconut oil, Great Lakes Gelatin, or shredded coconut.
  2. You could also skip the coconut milk all together and just do pureed blueberries and coconut shreds.
  3. Pure maple syrup (local if possible!) is a good sub if you don’t have raw honey around.
  4. Read this and this about the benefits of coconut oil and coconut products!

    This sounds and looks sooo yummy!!! Never made Popsicle before but I like blueberry and know it’s good for you, so this post caught my attention! One of these days, I’ll definitely give it a try.
