Looks refreshing doesn’t it?!This is one of our favorite “after naptime snacks” here. You will love how fresh, sweet, and satisfying it is!And when you make jello with gelatin from grassfed cows you are getting a load of protein and minerals you just can’t get from the boxed stuff in the store. Not to mention skipping out on behavior altering food dyes.This is so easy – it takes the same amount of time to make as the boxed stuff – literally minutes!
- 1 ½ cups berries (Fresh or frozen – if frozen be sure they are thawed out. You can use the juices that thaw from the berries as well)
- 3-4 TB raw honey or pure maple syrup to taste
- 1½ - 2 TB gelatin (Grassfed gelatin preferred – Great Lakes Gelatin is a great option)
- 1 cup filtered water
- Blend the berries and honey in a blender until smooth.
- Add the gelatin to the blended berries/honey, and let it sit for a few minutes while your water comes to a boil.
- Bring the water to a boil and add it to the blender with the berry/honey/gelatin mixture, and blend together.
- Pour into molds and refrigerate an hour or two before serving. I just use my muffin tin.
Kitchen Tips:
- Get Great Lakes Gelatin HERE. It is from grassfed cows and is extremely nourishing!
- If you don’t want the fancy foamy top then just use a whisk to combine the boiling water and berry mixture instead of blending it.
- Get creative with your molds! I ended up using my bunny mold that I have for Easter for some treats to bring on our family Easter gathering for the kids! I have a great flower mold too! Use whatever other shapes you can find for a great birthday party snack!
- Pack these up in the lunch boxes for school!
- When you come across a great berry deal or sale at the farmer’s market or grocer, stock up and freeze up! Just line them up on a baking sheet to freeze individually and then store the frozen berries in freezer bags. This is a great way to always have fresh berries without breaking the bank.
