You all know from THIS biscuit recipe how much I love to dunk in my soup!I usually make up my herbed biscuits for most of my soups or stews, but last year I decided I needed to try my hand at the flavors of a traditional Irish bread to go with my Irish stew!
I looked around at traditional Irish soda breads to figure out what seasonings/flavors were usually used, and this is what I came up with!Although we aren’t all grain free in our diets at this time, I already had this base for another biscuit I liked making, and liked how the flavor, and dense but bready texture made the biscuit. If you are a nut free home, you can use my base recipe for my coconut flour biscuit and instead of the herbs in that recipe, use the caraway seeds and raisins in this recipe!
- 3 cups blanched almond flour
- 1 ½ tsp baking soda
- ½ tsp baking powder
- ⅔ cup raisins
- 3 tsp caraway seeds
- 2 eggs, beaten (if you are egg free use and egg replacer)
- ¼ cup whole milk or coconut milk
- 2 TB honey
- Mix the almond flour, baking soda, baking powder, raisins and caraway seeds in a bowl with a fork.
- In a separate bowl beat the eggs, milk, and honey.
- Pour the egg mixture into the dry ingredients and combine.
- Spoon onto a silpat or parchment paper lined baking sheet, into biscuit shapes. Mixture will be gooey.
- Bake at 350 for 15-20 minutes and allow them to cool a few minutes before . Check them around the 13 minute mark in case our ovens run differently.
Kitchen Tips:
- Batter comes together and onto the baking sheet in less than 10 minutes – so easy!
- This makes 7 medium-ish biscuits. My girls split one. Leftovers are great and actually they freeze up good so you could double up if you want more left over, OR if you are doubling up the stew for the freezer, it would be a good idea to double up the biscuits for the freezer too!
- This is really a great base recipe for any biscuit – take out the caraway seeds and raisins to change up the flavors according to what you are having – for savory dinners use herbs or for a breakfast biscuit use cinnamon and dried fruit!
