The perfect accompaniment to any dinner…the biscuit.Years ago when I was off grains for a period of time to heal up my gut I made up this recipe so I could enjoy dipping and munching on “bread” with my soup or dinner. It has been years since, and although I can now digest properly prepared grains just fine, I still go to these for pairing up with a beef stew or other yummy dinner!
It’s a good thing to rotate your food around. So to ensure I’m not just eating wheat or other grains all day I have some grain free recipes to use.These biscuits are so flavorful and savory for dinner. You could sweeten them up without the herbs and use something like cinnamon if that is what you are going for. Or use a different herb or savory blend to your liking!
You’ll need:
1/3 cup coconut flour
½ tsp dried thyme
1 tsp baking powder
¼ tsp garlic powder
¼ tsp onion powder
2 eggs (if you are egg free – I have not tried this with and egg replacer but I’m thinking it would work perfect!)
2 TB whole milk (if dairy free use coconut milk or just water)
1/3 cup softened (not melted) lard or butter (if you are dairy free use lard or coconut oil)
- Mix all ingredients in a small mixing bowl (I usually start with a spoon but end up using my hands!)
- Roll up medium sized balls and flatten slightly on a cookie sheet lined with silpat or parchment paper. They won’t spread out so just shape them how you want.
- Bake at 350 for 20 minutes. Check around the 15 minute mark in case your oven temp is different than mine.
- Let them cool a bit to set up before picking up or eating.
Kitchen Tips:
- This batch makes 5-6 biscuits for me – with 2 being on the smaller side for my girls. I usually have 2 left over for the next day 😉 Double up if you want – I haven’t tried freezing these because they are so quick to make and it’s nice to have them fresh out of the oven but I don’t see why it wouldn’t work if you want to batch them up.
- The biscuit is a great soup soaker 😉 I love love dipping them!
- This is the perfect seasoning blend for us – play around with it to your family’s liking! You could even do like rosemary, or if you are having a Mexican soup you could use a taco season blend!
