Are the peaches as delicious where you are as they are here?! We have been eating them up over the last week, and as the season comes to it’s peak, I wanted to share one of our favorite ways to enjoy our fresh, juicy peaches!
Grab up whatever is left at the farmer’s markets this week, and some good quality, fresh cream, or, if you are dairy free try scooping the cream off the top of some coconut milk or use coconut butter or yogurt, and enjoy!
This works great for whatever fruit is in season by the way 🙂
Here’s what you’ll need:
½ cup cream (preferably raw, or low pasteurized, never ultra pasteurized). If you are dairy free try scooping the cream off the top of some coconut milk or use coconut butter or yogurt. THIS is a good brand of coconut milk in BPA free container if you don’t make your own.
2 tsp real maple syrup (local if possible!)
¼ tsp vanilla extract
- Blend the cream, maple syrup, and vanilla extract in a small mixing bowl with a hand mixer until whipped fluffy. This will take a minute or two.
- Serve sliced peaches on top of the fresh whipped cream.
Kitchen Tips:
- You will get about a cup of whipped cream from this batch – if you want more just double it! It keeps well in the fridge up to a week.
- You can use raw honey for the sweetner – you will have to warm the honey up a bit to incorporate it better however.
- Chop the peaches up smaller for the littles! Claire was a big girl this week and ate hers in slices just like her sister!
