Strawberry popsicles and smoothies are quite the staple in our home.
So when we visited our local strawberry U Pick patch for the summer this year, my wheels started turning on how I could make something “different” than the typical strawberry popsicle I normally do.
We had some rhubarb stored up in the freezer and I decided to see what I could do about combining those flavors with some nourishing, creamy fats for a fun treat!
Here is what I came up with – they are a huge hit all around!
- 1 cup rhubarb, coarsely chopped
- 2 cups strawberries, no need to chop
- 3 TB water
- ½ cup whole heavy cream (Raw preferable, but at least organic and not ULP)
- 2 tsp pure maple syrup
- ½ tsp vanilla extract
- Put the rhubarb, strawberries, and water in a small sauce pan and bring the heat up to medium/high. Use a potato masher to squish the strawberries and their juices out.
- Keep the strawberry rhubarb mixture at a low simmer for about 5 minutes until the rhubarb is soft.
- While the strawberry rhubarb mixture is cooking, use a hand beater and whip the cream, syrup, and vanilla extra for about 2 minutes to make whipped cream.
- Pour the cooked strawberry rhubarb mixture into a blender and puree – taste test and if it is too tart you can add a TB of honey 😉
- Fold the strawberry rhubarb puree gently into the whipped cream and pour into popsicle molds to freeze.
Kitchen Tips:
- You can leave out the whipped cream if you are dairy free, or whip up the cream off the top of your coconut milk (You can make your own, or THIS brand comes in a BPA free container)! If you leave out the cream, you may need to add some honey to the strawberry rhubarb puree if it is too tart 😉 The whipped cream helps tame the tart – although we love it!
- If you are out of rhubarb, just do it up with the strawberries – OR add lemon or lime for some tart!
- You could layer the strawberry mixture and the whipped cream mixture to make them even prettier if you have the time!

- I have THESE great popsicle molds, and the ones in the picture I picked up so cheap at a local dollar store – BPA free too! I am always shopping around for popsicle molds so I can have a variety and plenty all the time! THESE may be my next purchase – my girls LOVE bugs – they would flip! I also have my eye on THESE – how cool is that!
