You know what I love about summer?

Cheap produce πŸ™‚ Sorry if that sounds lame to you – but when you are on a super tight budget, your only options for fruit in the winter boil down to apples, bananas, and maybe some raisins here and there. So when summer rolls around it is such a treat to have different fruit that we can afford!

Watermelons have been on sale a lot the last couple weeks and one week my husband brought home the *biggest* watermelon I have ever seen. He was so proud of his find, so of course we found ways of eating up besides just fresh – smoothies, popsicles, and I ended up making some into jello that turned out so yummy!

I love using the Great Lakes Gelatin for jello making because it is full of REAL protein from grassfed cows – did you know that is what gelatin really is?? And when you source out a good gelatin you can feel good about giving your kids these special treats as snacks with a protein punch!

Ingredients
  • 4 cups of pureed watermelon
  • 2-4 TB organic pure cane sugar, raw honey, or maple syrup
  • ΒΌ cup Great Lakes Gelatin
Instructions
  1. Warm the watermelon puree and honey in a sauce pan until it is hot to touch – no need to simmer or boil – it just needs to be hot to dissolve the gelatin.
  2. Pour the hot watermelon/honey mixture into your processor or blender and blend in the gelatin until completely combined and smooth.
  3. Pour mixture into your mold of choice and set up in the fridge a good few hours.

Kitchen Tips:

    • You can skip the extra sweetener if you wish – I did do a batch like that and my girls never knew the difference – I preferred the extra kick of sweet though! My taste buds are so tainted πŸ˜‰
    • Get your gelatin the cheapest HERE.
    • If you don’t have the super cool flower mold I have (or you have boys in the house!), you can really just use muffin tins or cups that you have around the house! Works just as good. OR check outΒ THIS selection of fun shapes! I’m thinking I need this bugs one next – seriously my girls LOVE bugs πŸ˜‰ Or this dinosaur one for when my nephews come visit!
    • Think of how fun these would be at a summer birthday party! Pick out a fun shape mold and the kids will never know they aren’t getting red dye and sugar packed candy or boxed jello πŸ˜‰
    • If you are packing these up for school or camp snacks or a day out at the beach or the park just keep them on ice/cold – they just taste better that way.

    What a great idea! They just taste better cold, but they will also melt if you don’t keep them cold and it is a hot day. I learned that the hard way! Thanks for the recipe.

      Good to know! I have never had them out in the heat – at room temp they are just “ok” so I pack them on ice when we go out and about πŸ˜‰
