Breakfast is the most important meal of the day, right? But no matter what your schedule is like, it can end being a rushed, grab what you can meal for everyone. And depending on what you or the kids grab that morning, you can be hungry again a short hour later. Oatmeal is a great way to start the day, but it can get boring eating the same kind every morning or can also become a hassle when you are in a hurry!
I have found my go to breakfast is baked oatmeal. I have tried so many different recipes and finally combined them, tweaked them, and came up with the perfect recipe for us! It’s not only my go to for us every day, it’s also what I make for overnight guest or what I bring/send to breakfasts at work or other breakfast get-togethers. I also love to bring this when I am bringing a meal to someone who is sick or just had a baby, so they not only get dinner, but breakfast in the morning. My husband will eat oatmeal anyway, but I am just not a huge fan of the consistency of on the stove old fashioned oats, so this recipe is perfect for me! It’s simple, best if made the night before, and can be reheated for days to come. When it’s just the 2 of us eating it, one recipe will last most of the week. SO, here it is!
1 cup vegetable oil 2 TBL baking powder
1 cup sugar 1 tsp salt
4 eggs 6 cups quick oats
2 cups milk ½ cup blueberries
½ tsp vanilla ½ cup raspberries
Topping:
1/4 cup brown sugar
1 tsp cinnamon
Whisk together oil, sugar, eggs, milk, and vanilla. Stir in baking powder, salt, and oats. Fold in berries. Mix brown sugar and cinnamon and sprinkle over the top. Pour in greased 9×13 pan. Let rest overnight. Bake at 350 for 40 minutes!
So simple, yet so yummy! Serve with fresh fruit, milk, and coffee! This a great breakfast to start the day off with some healthy grains and fruit while giving something to “stick to your ribs” throughout the morning. I have sent this several times with my husband to work and every time he comes home and asks me to send him with recipe cards to hand to his coworkers! December 1, 2014 at 12:25 pmInteresting…. I’ve never baked oatmeal. I wonder if you could substitute coconut oil for the vegetable oil. I would probably use baking Truvia or Coconut palm sugar. I like the addition of oil — that would definitely make it easier to reheat and not be so sticky and clumpy.
