a simple recipe :: blueberry peach crisp

We are enjoying summer days here in Michigan!  It’s been 90 degrees, and we spent our weekend enjoying some of our favorite summer things- grilling, bonfires, campground, and water activities to stay cool. With these fun summer days brings time together with family and friends, and with that brings yummy food! I love fresh fruit this time of year.  Even though all of our local produce isn’t ready yet, fruit even at the grocery store tastes a little better and fresher!

We love our fruit in different ways.  We love berries with our breakfast, watermelon at cookouts, and peaches and blueberries in our favorite desserts.  Last night we made one of our favorites, so I thought I’d share with you!

Blueberry Peach Crisp

Ingredients:

2 cups blueberries

3-4 medium peaches, peeled and cut

Topping:

1/2 cup flour

1/2 cup quick oats

2/3 cup brown sugar

6 TBL butter

1/8 tsp. salt

1/2 tsp. cinnamon

Preheat oven to 350 degrees. Grease an 8×8 pan. Put blueberries in the bottom of the pan and evenly layer peaches on top.

Mix together all dry ingredients in a separate bowl.  Cut butter into small cubes, and mix into dry mix with a fork until mixture is crumbly. Sprinkle on top of fruit.

Bake for 35 minutes.  Remove from oven and let cool for 10 minutes.  Serve warm with vanilla ice cream.


Enjoying this dessert on the porch with my family after grilling dinner and just enjoying a summer night outside has me excited for more summer days like this.  I love the longer hours of sunlight, the days spent with family and friends, and the hours of fun my kids are having playing in the sand in water.  We end summer days with baths and stories, and I love how quickly we all fall asleep.  I’ve always said fall was my favorite season, but weekends like these make summer a pretty close competitor.

    The first time I made a peach pie was an awakening! Just soo good. I haven’t made a crisp with peaches yet, but I’d love to try this. This year the peach harvest is expected to be good, that means many peach crisps, cobblers, pies!

    What a delicious summer recipe! One of our favorite activities is going to the farmer’s market during the summer months. I’d love to make this for my grandsons!
