I’ve been having a hard time with my meal planning over the past couple weeks! We have been eating the same type of meals over and over and I’ve been looking for some new recipes and trying to bring back some of our old favorites into our routine! I came across a recipe a friend of mine had made for the freezer meal group I used to be a part of! Not only is it a version of one of my all time favorite foods, but I remember it being a huge hit with my family! I made a couple changes to suit our family, and this new recipe will be one that we have at least once a month! It’s easy to make the night before or even a couple weeks ahead to keep in the freezer, so I know this will be another meal to make ahead for busy weeks. I’ve also added to my list of meals that make a great dish to bring to someone!
Chicken Parmesan Casserole
3 lbs. boneless, skinless chicken (cubed and cooked)
2 28 oz. jars of pasta sauce
2 cups shredded mozzarella
1 cup shredded parmesan
2 cups bread crumbs
2 TBL olive oil
Fresh herbs to taste (oregano and basil are my favorites)
Preheat oven to 350 degrees. Spray 9×13 pan with cooking spray. Spread cooked chicken over the bottom of the pan. Pour cans of tomato sauce over the chicken. Sprinkle the cheeses over the sauce layer. Top with bread crumbs. Drizzle olive oil over the top. Add fresh herbs. Bake at 350 degrees for 30 minutes. (serves 8-10)
This is a great twist on one of my favorite foods, Chicken Parmesan. It’s a great meal to double the recipe and serve a big group! We love to have it with a side of pasta or garlic bread, and a good salad! Enjoy!
