a simple recipe :: favorite candy bar meets cookie :: pb stuffed chocolate cookies

It seems like in the past few months, I’ve needed to bring dessert many different places. Usually this means I go to an old standby recipe. I have recently revisited a recipe that I haven’t used in a long time, and I think it may have been re-added to the list of favorites! It’s already been requested again at my husband’s work, and I’ve made them a couple times for family too!

I’ve always loved any combination of peanut butter and chocolate. This may have been a result of growing up with brothers who loved it too! My favorite candy bar is peanut butter cup, and perfectly enough my husband can’t think of a better ice cream, brownie, candy bar or cookie than chocolate/peanut butter!
Here enters the peanut butter stuffed chocolate chip cookie. The recipe will make about 3 dozen cookies. Enough to take somewhere or to freeze some if you are making them for home. There are two parts to them, so to make the two parts fit together, I roll them out separately to make sure I have equal amounts of each. I certainly don’t want to eat the chocolate cookie without the peanut butter!

Peanut Butter Stuffed Chocolate Cookies

Ingredients:

2 1/2 sticks butter (divided use)

4 cups flour (divided use)

2/3 cup cocoa powder

2 tsp. baking soda

1 tsp. salt

1/2 tsp. baking powder

2 1/2 cups sugar

2 eggs

4 TBL water

2/3 cup peanut butter

2/3 cup powdered sugar

Preheat oven to 350 degrees. Melt 1 stick of butter in microwave.  Stir in 1 cup of flour.  This will from a ball of dough.  Combine this with remaining butter, sugar, water, and egg. Mix on medium speed for 1 minute.  Add flour, cocoa, salt, baking soda, and baking powder.  Mix until combined.

In a separate bowl stir peanut butter and powdered sugar together.  Make 36 balls of each mixture.  Flatten the chocolate balls and place the peanut butter inside.  Wrap around until you can’t see the peanut butter.  Place on baking sheet and bake for 13-15 minutes.

    I love peanut butter and chocolate too. In fact that is my all time favorite shake at Sonic lately. Extra chocolate mind you. It has been years since I have made a cookie from scratch, but this one sure looks worth the extra effort. I’ll have to make sure I have extra milk handy too.
