When my husband and I first got married, my mother in law gave me a cookbook called “Cooking for 1 or 2.” It is a gem (and so is she). Now that I am cooking for 5, I don’t get to use it as much as I used to. But since my kids don’t love soup like my husband and I do, I still make this one from time to time. It is fast, easy and so delicious!
Ingredients ::
1 Tbs butter
1 medium onion, sliced
2 1/2 cups beef broth
salt and pepper (to taste)
2 slices toasted French bread
1/4 cup grated Swiss cheese
Cooking Directions ::
Melt butter in a small saucepan over medium heat. Add sliced onion and sauté until tender and golden brown. Add beef broth and simmer 15 minutes. Season with salt and pepper. Place toast in 2 bowls and pour soup over toast. Sprinkle with cheese. Place under broiler for a few minutes until cheese melts.
Easy peasy!
