Sometimes summer gets me a little off schedule. During the school year, we stick to a pretty tight schedule. Kids activities keep us busy so I do my best to meal plan in advance and we eat when it works for the whole family to make it happen. In the summer, I let things slide. Another hour at the pool? Sure. Biking to a friend’s house? Not a problem. BUT when kids come home so hungry, I need a super quick snack that can double as a meal. That’s when I break out these protein packed parfaits. They are full of great, whole foods and they are delicious!
Ingredients: Wella bar of your choice (I used Awesome Almond today, but they are all delicious and pair easily with fruit), fruit of your choice (I used nectarine, plum, strawberries and bananas. You could easily use anything in season or what you have on hand); yogurt.
Directions: Crumble the Wella bar. Layer in a bowl (or a fancy parfait glass if you have one) with fruit and yogurt and eat! Yep, it’s that simple! Since Wella bars are full of organic protein and are sweetened with honey (read more about their ingredients here), I totally count this as a meal! I love having my fridge always stocked with Wella bars so I can add them to a snack to make it a meal!
