a simple recipe :: slow cooker chicken cacciatore

I am of the opinion that Saturdays are for relaxing. Sure, it is a great day to clean the house and catch up on laundry but I don’t usually go out of my way with a fancy schmancy dinner on Saturday. To that end, today I decided to fire up my crock pot. I checked out what I had in my fridge and found green peppers and mushrooms. I knew I had a can of crushed tomatoes and tomato paste in my pantry so I grabbed them too. Here is what I came up with:

Ingredients ::

4 boneless chicken breasts cut in half
2 green peppers, chopped
1 onion, chopped
1 package fresh mushrooms, sliced
1 large can crushed tomatoes
1 can tomato paste
3 cloves garlic, chopped or minced
Italian seasoning to taste

Cooking Directions ::

Put chicken in crock pot. Add onion, peppers and mushrooms. Sprinkle Italian seasoning and garlic on top. Cover with tomato paste and crushed tomatoes. Cook on low 7-9 hours or on high 3-4 hours.

Serve over spaghetti (or not — it is tasty on its own but my kiddos love spaghetti!). I am super excited to eat this tonight!!

    I like that this does not involve “cream of something”. Most crock pot recipes do and make them so unhealthy.
