Oh, it has been a long, LONG winter. The snow and ice and frostbite have started to take their toll. Even my kids are sick of the below freezing temperatures we have endured this winter. My 18 month old has no idea what a snowman is because every time we venture outside, I am afraid I am going to lose her in the piles of snow that surround our cul de sac.
But today, oh, today, the wonderful smells of a hearty turkey soup are taking the edge off a bit. There is nothing better than a delicious soup chock full of veggies, noodles, and the last bit of frozen turkey leftover from Thanksgiving.
Ingredients ::
1 lb. turkey, cut up
2 8 oz. packages mushrooms, washed and sliced
4-5 stalks of celery, cut up
2 onions, sliced
4 large carrots, peeled and sliced
12 oz. package egg noodles
2-3 32 oz containers chicken broth
1-2 tsp oregano
1 tsp basil
1 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
3-4 bay leaves
Cooking directions ::
Combine all ingredients in a large (and I mean large) pot. Cook over medium heat, stirring occasionally, for approximately 30-40 minutes. Serve with crusty bread.
