Don’t be scared of using Splenda in recipes. I know it’s super easy to add to your green tea or sprinkle on a grapefruit, but what about when you bake? It’s as simple as following the recipe, but swap out your sugar with Splenda Sugar Blend (see conversion chart on package). Please note, you still need sugar to react with yeast, but the blend gives you the best of both worlds. You get a baked good that turns out and you save yourself calories at the same time.
Here is English Muffin bread with a Splenda makeover. I grew up eating this yummy bread. We affectionately called it “hot bread” because my mom would pull it out of the oven when we got home from school. We had it as our snack with butter and honey. It’s delicious when it’s warm and fresh or toasted the next morning for breakfast. It makes awesome grilled cheese bread too. This is a very healthy bread recipe too. There is no fat in the bread, just the butter you put on it when you eat it. 🙂 It’s an egg free recipe as well!
- 1 package yeast or 2¼ tsp yeast
- 3 cups flour
- ¾ tsp Splenda Sugar Blend instead of 1½ tsp of sugar
- 1 tsp salt
- ⅛ tsp baking soda
- 1 cup milk
- ¼ cup water
- cornmeal
- Combine 1½ cups flour, yeast, sugar, salt, and soda.
- Heat liquids to 130 degrees (or microwave about 1 to 1½ minutes)
- Add liquids to dry mixture and beat.
- Stir in rest of flour to make a stiff batter.
- Grease a bread pan (8½ x 4½) and dust with corn meal.
- Cover and let rise 45 minutes.
- Bake at 400 degrees for 25 minutes.
- Remove from pan immediately and cool.

As we start a new year, there will be lots of changes we will all commit to when it comes to our diets. The average American consumes more than 22 teaspoons of added sugar a day.
