My 5-year old daughter LOVES to bake. She rarely eats our culinary treats (pickiest. eater. ever.) but she really loves the process of adding each ingredient, mixing them all together, and seeing what they become. Our all-time favorites are chocolate chip banana bread, confetti cupcakes, and sugar cookies. I know you probably don’t believe that she won’t eat what we make but it is true. We once made brownies (nothing fancy, just a Betty Crocker mix) and after I told her she HAD to try a bite (“If you make it, you have to taste it,” I told her), she informed me that it tasted like vegetables. VEGETABLES! We are cut from a different cloth, she and I.
When I told her we were going to make yummy red velvet pancakes from Buttermilk, Inc. (she looked dubious from the start), she agreed to help…..but only because her love of the process itself, not because she was excited about the end result. And of course, my son had to be included (because fair is fair, after all). I told him we were making “Iron Man” pancakes because they were red. He was immediately on board. (Of course afterward, he asked me, “Now can we make Superman pancakes?”)
So we measured and stirred and watched and waited as our ingredients turned into…..THE BEST PANCAKES EVER! Not only are they beautiful, they are sinfully delicious. It was like we were eating dessert….but since technically we weren’t, dessert was still an option! (the Red Velvet Pancake Mix actually doubles as a Red Velvet Brownie Mix so we totally could have done it but we decided to save those treats for another day.) And EVERYONE enjoyed their pancakes (even my picky “it tastes like vegetables” girl)….so much so that we all went back for seconds (and thirds, for some…..not saying who, though).
I am super excited to test out the other recipes on the Buttermilk, Inc. website. (Although I may have to exercise restraint because I also promised my mom that I would save some of the mix for when she comes to visit next month.) They even have a tutorial on how to make the perfect pancake (which I will admit to watching since I am still a novice when it comes to baking). Once you watch it, you will not be able to resist ordering a can (or three) to make at home!!
