This recipe is easy, delicious, makes a ton, and you can hide lots of veggies in it. Let me start with a confession…we do not eat enough vegetables in our home. We like fruit, but outside of our weird 3 year old who eats all things green and cries for more, nobody likes veggies. I’ll admit it looks a little bit goulashy, but it’s really tasty. A sweet friend named Mrs. Gordon brought this soup to my family at a rough time when Annabelle was in the hospital. I forever have a special place is my heart for “Gordon” Beefy Soup.
Beefy Soup (I believe it is a Country Living recipe)
Serves 5-6 (this is the recipe in half!)
- 1 to 1 -1/2 pounds ground beef
- 1/4 C butter
- 1/4 C flour
- 3 C water
- 1/2 C chopped onion, celery, carrot (veggies you like, I add frozen or canned spinach too!)
- 10 oz. package frozen mixed veggies
- 14 oz. can diced tomatoes
- 8 oz. can tomato sauce
- 1 Tablespoon beef bouillon
- 1 tsp. salt
- 1/2 tsp pepper
Brown meat and set aside.
Melt butter in dutch oven or large pot and add flour. Stir about 3 minutes. Gradually add water (medium heat) until bubbly.
Add ground beef and remaining ingredients. Bring to a boil. Reduce heat and simmer 1 hour uncovered.
That’s it, you are done. Serve with bread {pictured with pretzel rolls from Costco- best rolls ever} and you have a hearty winter meal. Maybe it’s just me, but I think it’s even better when reheated for lunch the next day. You can freeze it and reheat later as well!
