Mexican is our go-to. All four girls and my hubby and I enjoy it. So, I’m always looking to mix things up in the Mexican food department. We have nachos, tacos, Mexican bakes and burritos! I love burritos and the sauce that goes on top. The perfect combination! I serve our burritos up with tortilla chips and corn bread, and voila! Easy meal! So, let’s do this….
20 MINUTE BURRITOS! Burrito Ingredients :: Azteca No Artificial Preservative flour tortillas – Burritos size 1 lb hamburger beans cheese lettuce tomatoes 1 package of taco seasoning Sauce Ingredients :: jar of mild taco sauce 1 cup of ketchup 1 1/2 cups water Use whatever ingredients or store bought items you choose to make this recipe your own 🙂 However, I have used this recipe for 10+ years. I choose to use the Azteca No Artificial Preservative flour tortillas in the Burrito size. In addition to having no artificial preservatives, these tortillas also contain no high fructose corn syrup, and have no artificial colors or flavors. I am not saying we are all real food and eat all organic all the time. It’s just not realistic for our busy lifestyle. BUT, I do make simple choices like this to help us stay healthier and eat healthier. Choosing the tortillas is an easy choice. They taste great and are easy to find in the refrigerated aisle at my local Walmart and Family Fare. Mix the sauce ingredients and set aside. Cook the meat with the seasonings and then set aside. In a sauce pan with oil, toss in the tortillas to get them a little crispier than usual. You can easily skip this step if you choose. If you don’t skip it, once the tortillas are looking how you want them to, take them out and start stacking on a plate. Between the cooked tortillas, add paper towel to get rid of excess oil. Once they are done, take the tortilla and fill with the burrito ingredients you want. Wrap them up and place them in a dish that can go in the oven. Once all the tortillas are filled, pour the sauce over top. Then put cheese on top. I typically use an entire bag throughout the whole process. Love me some cheese!! Bake for 20 minutes at 375 degrees. When they are complete, let them cool a bit before serving. Then top with whatever you desire!
What other options do you have when it comes to Mexican meals? I’m always on the look out – let me know!
