I can’t claim any Hispanic heritage, but there is a heavy Hispanic population where I live. My neighbors actually had a LIVE Mariachi band in their backyard one night! It was a bit random for a girl who grew up in the Midwest, but we loved it! HERE is a video. We shamelessly enjoyed the party next door.

Cheeky helped us celebrate Cinco de Mayo with their bright and festive plates. The colors are brilliant! I find myself stopping in the aisle at Target when I spot a new Cheeky pattern on their paper products. The royal blue chevron disposable coffee cups were my favorite this winter.

I didn’t know much about Cinco de Mayo, but HISTORY.com helped me out with some background on the holiday. Do you celebrate Cinco de Mayo?

Cinco de Mayo—or the fifth of May—commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations. Cinco de Mayo traditions include parades, mariachi music performances and street festivals in cities and towns across Mexico and the United States.

We are having our favorite Chicken Ranch Tacos (usually a Taco Tuesday special in our home) and I’m going to share our super secret recipe. It’s all about the “Special Sauce”!

CHICKEN RANCH TACOS

So basically you have your usual taco fixings: meat, cheese, lettuce, tomatoes, avocado, taco shells, corn or flour tortillas. We like to grab a rotisserie chicken that I shred up and mix with taco seasoning (about 1/2 a packet).

SECRET SAUCE

1/2 cup ranch dressing

1/4 cup reduced-fat sour cream

1 (1 ounce) packet taco seasoning mix, divided

1 tablespoon mild chunky salsa

This sauce is best when you make your ranch with the Hidden Valley ranch packets (mix with milk, mayo, etc -follow directions on box). Then you add the sour cream, taco seasoning (other half of the packet), and salsa to your ranch. Boom! You have secret sauce that makes for the best tacos EVER!
