This recipe comes to me from my husband’s family and his Cub Scout days, where they made this recipe in a big pot over an open fire. However, I also love it for evenings at home! It’s so easy (really, really, ridiculously easy) and it makes great leftovers.
In addition to a pound of ground beef, this is what you’ll need:
These are all pantry items, which makes it a great meal for the day you get back from vacation and have NOTHING in the refrigerator. Start by browning ground beef and draining the fat. Add the dirty rice mix and follow the instructions on the box. I use Zatarain’s because that is what is sold at my grocery store, but any dirty rice mix will do.
When the rice is done stir in the beans…and tada! You have dinner. I usually serve this with biscuits and a salad.
This also makes excellent leftovers. I usually put the mix in a tortilla or taco shell and add sour cream and shredded cheese (think Chipotle here – the rice, beans, and meat make the perfect burrito base).
Do you think this is something you’d like to try? If you make it, let me know what you think!
- 1 pound ground beef
- 1 box of dirty rice mix
- 1 (15oz) can of kidney beans drained and rinsed
- 1 (15oz) can of black beans drained and rinsed
- Brown ground beef in large skillet and drain fat.
- Follow instructions on dirty rice mix box. (For Zatarain's dirty rice, stir in rice mix and 21/2 cups of water. Bring to a boil. Reduce heat to low. Cover. Simmer for 25 minutes or until rice is tender.)
- Stir in both cans of beans.
