Instructions
Warm the watermelon puree and honey in a sauce pan until it is hot to touch – no need to simmer or boil – it just needs to be hot to dissolve the gelatin.
Pour the hot watermelon/honey mixture into your processor or blender and blend in the gelatin until completely combined and smooth.
Pour mixture into your mold of choice and set up in the fridge a good few hours.
