1 yellow pepper, chopped
6 cloves garlic, minced
1 ½ cups organic corn (I get large bags of frozen organic corn at Costco)
1-4oz can diced green chilies
2-3 TB taco seasoning (I use my homemade blend listed in the Kitchen Tips – if you are using a packet of season you may want to start out with a small amount and add more to your taste.)
Sea salt/pepper to taste
Instructions
Everything into the crockpot and turned on low for 8-10 hours! That’s it!
Top with shredded raw cheese, avocado/guacamole, or sour cream if you wish!
