Now what do you replace them with? I usually mention the fats I love cooking with in most of my recipe posts, and if you follow me at all you know my love affair with coconut oil, butter, and real, pastured animal fats like lard and tallow.

I didn’t grow up on the flavor of it, and every time I would buy it at the store with good intentions I just could never develop a taste for it.

As it turns out, that olive oil I *thought* I was buying in the store was most likely a highly refined olive oil that was cut with a cheap canola or soy oil. This is a very common (and unfortunately legal) practice among the olive oil industry in the US. It makes the olive oil cheaper and more abundant. Kinda makes you feel scammed, eh?! I encourage you to study this out for yourself – HERE is a great starting point to read further on this.

I started trying to find real olive oil at that point, and as it turns out, it is really hard to find where I live!

FL1I was so pleased last summer when some family friends of ours gifted us with some of their family’s olive oil from their olive farm in Greece. I almost fell over the first time I tasted it. Where had this been my whole life?! It was SO delicious. Buttery, fruity, and so satisfying. I couldn’t get enough. We were dipping our bread in it, making mayo, and drizzling our veggies and chicken with it every day until it was gone – which didn’t take long! My girls were eating it right off the spoon!

You can imagine my excitement when the family decided to make their olive oil available to the public this year!

    I love the value they have place on the importance of teaching each new generation the process & that each generation still goes to Greece regularly to check up on the processes.

    I learned and love that no machinery is allowed anywhere near the grove, all the work is done by hand by using special rakes.

    I think it’s fantastic that they’ve been able to keep the business going and passed throughout the generations, all while maintaining it’s integrity and ensuring the generations all understand the importance of not using chemicals or pesticides during any part of the process.

    I learned that there’s no machines allowed near the grove,all the work is done by hand.Their oil is 100% authentic Olive Oil,they don’t mix anything to devalue their oil. I love that it’s family run. Thank you 🙂

    I think trusting a family with making the oil is key as many large companies are cutting the oil to stretch it
