I love just about any excuse to get together for brunch! Birthdays, baby showers, just a fun day with friends, brunch is the perfect meal. We love so many good breakfast foods, and we love being together with family and friends, so when we have a reason to celebrate something, brunch can always be a fun option! Mother’s Day is coming up this weekend, and both Saturday and Sunday are great days to get the family together to celebrate mom with a yummy brunch and time together! There are tons of great options for your brunch spread, but I will share a few of my favorites!
I love being able to get some dishes made ahead of time! Two of my favorite options for this are two that I’ve shared with you before! This Overnight French Toast Casserole is amazing, and perfect for assembling the night before and baking it in the morning! It is delicious with fresh fruit and maple syrup! We also love this Overnight Egg Casserole! It is a recipe that can be very flexible, substituting your favorite vegetables, breakfast meats, and cheese to make it just how you like it! We love making omelets, but this is a great option to include all your favorite omelet items without having to be cooking while your guests are over!
These two dishes, along with some fruit and either bacon or sausage make a great brunch your mom and other guests will love! Here is one more recipe idea that we love to make your brunch special!
Sausage Balls
1 lb. ground breakfast sausage
12 oz. mild cheddar cheese
2 cups biscuit mix
Mix all ingredients together. Roll into small balls and place in a lined baking sheet. Bake at 350 for 25 minutes, or until sausage is beginning to brown. (These can also be made the night before. Just make and refrigerate or freeze until ready to bake.)

May 9, 2018 at 11:27 amI’ll be spending Mother’s Day at my daughter’s this year. She is due any day now with our first grandbaby! So we will be celebrating together. I think a brunch would be wonderful on Mother’s Day. I’m going to share this with her and, depending how she’s feeling, we can prepare a brunch together. Goodness knows the guys won’t want to do it!!!
