pillsbury easy frost :: black bottom cupcake recipe

Don’t be intimidated by baking and don’t make boring old cupcakes ever again.  I’d like to share my all time favorite recipe for cupcakes.  I’m not allowed to bring anything else to church potlucks, baby/wedding showers, or family gatherings.  Thank goodness they are easy to make.  Even easier since I discovered Pillsbury Easy Frost (no-fuss frosting).

Black Bottom Cupcakes

Pick your favorite flavor of chocolate cake mix and prepare as directed.  (I think triple chocolate fudge is our favorite but you can use any flavor combination…strawberry, red velvet, carrot cake, etc.).

Filling

1 8oz. package of cream cheese

1/3 cup sugar

1/8 tsp. salt

1 egg

1 cup chocolate chips

Melt the cream cheese in the microwave for 45 seconds, or until soft enough to stir.  Don’t get it too hot or the egg will start to cook when you mix the filling ingredients.  Stir together cream cheese, sugar, salt, egg, and chocolate chips.  Set aside.

After lining your cupcake tins, take your 1/3 measuring cup and scoop chocolate cake mix into cupcake tins. Then take a spoonful of the cream cheese mixture and put a good size dollop in the center of each cupcake.  Bake cupcakes as directed on the cake mix box.

When the cupcakes have cooled, frost them with Pillsbury Easy Frost.  I suggest the cream cheese flavor, but any will do.  You will literally have them frosted in 5 minutes and they will look like you are a professional baker.  Simply point and shoot the frosting starting in the middle and working outward in a circle.  If you want height you can swirl back toward the center.  Ta da!

To dress them up even more, add the candy pearls.  I have found them at Walmart and Michael’s in the Wilton section.

Here is a video with more tips on using Pillsbury Easy Frost.  It costs a little bit more than a can of frosting, but don’t forget that sometimes your time is money.  Most of the time, it’s worth every penny for me.  One can will frost 24 cupcakes. my SIMPLE star rating :: 4 out of 5

      Yeah, I’m just not sure I know how to ship cupcakes just yet. They could be a pile of crumbs. I do have a lady shipping cookies to a friend this week…MI to CA. I’m curious to see how she packs them! Just go make yourself some, they are easy. I promise! 🙂

      How fun you can try the cupcakes in the new bake ware! I wouldn’t mind something different to bake cupcakes in. I hate washing muffin tins. You’ll have to link back to this post and show us how you do with the easy frost! 🙂
