Fall is in the air and with the cooler nights and rainy days we have been having I suddenly felt compelled to get out my box of Pumpkin Spice Cheerios and get creative. After snacking on a handful during my recipe creation there is no doubt that these would make a delicious breakfast with some nice cold milk, but I decided to go decadent and make some dessert bars using these little circles of deliciousness. If you haven’t spotted them at your local store yet be on the lookout because you don’t want to miss these limited edition Cheerios from General Mills!
Ingredients ::
- 4 1/2 cups Pumpkin Spice Cheerios
- 1/3 cup butter, melted
- 1/3 cup nut butter (I made pecan butter using roasted pecans and my food processor)
- 1/4 cup packed brown sugar
- 1 egg white
- 1 cup roughly chopped roasted pecans
- 24 soft caramels (12 cut into quarters, 12 for caramel drizzle)
Instructions ::
- Heat oven to 375ΒΊF. Line 13×9 inch baking pan with cooking parchment paper, folding edges if necessary.
- Using food processor, finely crush 4 cups of the cereal. In medium bowl, mix melted butter, nut butter, brown sugar, and egg white until well blended. Stir in crushed cereal until mixed well. Pour cereal mixture into pan; spread evenly, and press firmly against bottom of pan. Bake 8 minutes.
- Sprinkle with chopped pecans & quartered caramels, and bake for an additional 2 minutes. Remove from oven.
- Melt the remaining 12 caramels in a microwave safe bowl for 30 seconds, stir, and microwave another 30 seconds. Drizzle melted caramel over bars using a small spoon. If the caramel hardens too much to drizzle microwave for additional 5 second increments until remelted. Top with remaining half cup of Pumpkin Spice Cheerios.
- Allow to cool for 15 minutes and then cut with a knife and enjoy! Make sure the caramel is sufficiently cooled before eating.

This was an treat that was equally anticipated by myself and my 6-year-old assistant. She was very excited to smell the delicious Pumpkin Spice Cheerios, “Mom! They smell like cinnamon and FALL!” and even more excited to EAT the bars once they were completed. I hope you enjoy with a tall glass of milk or a nice mug of coffee this fall!

October 26, 2016 at 10:47 pmJill, they are a fairly crumbly bar. An extra eggwhite or possibly some additional nut butter may help hold them together more to your liking. Or just add more caramel! π
