Makes 1 9×13 inch pan (20 servings).
2 cups organic quick oats
1 cup organic all-purpose flour
3/4 cup packed organic brown sugar
3/4 cup organic raisins
1/2 cup organic wheat germ
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 cup chopped organic walnuts
1/2 cup olive oil
1/2 cup organic honey
1 organic egg
1 tsp. organic vanilla extract
1 tsp. organic almond extract
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Line a 9×13 inch pan with aluminum foil or parchment paper and spray with Organic Oil spray.
2. In a large bowl, stir together oats, flour, brown sugar, raisins, wheat germ, salt, cinnamon and walnuts. In a smaller bowl, thoroughly blend oil, honey, egg and vanilla; pour into the flour mixture, and mix by hand until liquid is evenly distributed. Press evenly into the prepared baking pan.
3. Bake for 25-30 minutes in the preheated oven, or until the edges are golden. Cool completely in pan before turning out onto a cutting board and cutting bars.
These granola bars are fantastic. You can also add and subtract ingredients. I like to add dates, coconut, and carob chips. I make them different every time. My husband loves them. I always have to double the batch, because they disappear very quickly in our house.
