With all the carbohydrates I consume on a daily basis, I was super excited to discover this DELICIOUS alternative to spaghetti! Typically I am not a fan of squash… I’ll admit it. BUT Once smothered in cheese, pasta sauce and ground meat, this dish is lip lickin’ good!
INGREDIENTS:
- 1 – spaghetti squash
- 1/2 pound – ground meat of choice
- 1 Jar of spaghetti sauce (your choice!)
- 2 cups – cottage cheese
- 1 package of shredded cheese
DIRECTIONS:
- Preheat the oven to 350 degrees
- Cut the spaghetti squash in half lengthwise. Place each half face down in a pan. Add a little water to the bottom – about 1 inch. Bake in oven for 30+ minutes – or until tender.
- While spaghetti squash is cooking, cook ground meat in a pan until done. Add spaghetti sauce to the ground meat.
- Once spaghetti squash is done cooking and tender, take a fork and “fluff up” the inside of the squash.
- Mix in cottage cheese into each half of the squash.
- Put meat/sauce mixture on top of the squash/cottage cheese mixture.
- Cover the squash with shredded cheese.
- Turn the oven to broil and put the “lasagna” back into the oven. Broil until the cheese is bubbly and brown.
- Voila! Spaghetti Squash Lasagna!!

August 16, 2015 at 2:21 pmI’ve wanted to try spaghetti squash in italian food but I think they always use spiralizers which I don’t have yet. I would love to try this and I think I can get my husband to try it since it still has ground beef in it.

August 12, 2015 at 4:00 pmLike you, I am not a huge fan of most squash. I do like zucchini and yellow squash, but not crazy about the “harder” one. However, like you said, smothered in the works for spaghetti I think I could learn to love it.
