I am a sunshine girl – the sun energizes me and makes me happy. It’s only fitting that one of my favorite days of the year is the Summer Solstice, the longest day of the year (or one of a few at this peak time) – which happens to be today! On a side note, it’s also kind of funny that the Winter Solstice, the shortest day of the year, occurs the day after my birthday. The sun-worshiper was born on one of the shortest days of the year, go figure!
To celebrate this most amazing day, today’s posts will all be about summer! And to start it off, here’s a FANTASTIC margarita recipe that I’ve been working on for several consecutive summers. I think I finally have the perfect mix and ratio of ingredients, plus almost every measurement is 1.5 ounces, which is a standard shot glass, which makes things super easy! And the addition of Fresca really gives it some sparkle!
Jessica’s Summer Solstice Sunset Margarita
Use a rocks glass, or your favorite shorty glass, and coat the rim with salt (or sugar!) if you wish (I don’t). Fill the glass with ice, then add in the following ingredients.
1.5 ounces Gold Tequila
1.5 ounces Orange Juice
1.5 ounces Fresh Lime Juice (you can use Limeaid if you like it sweeter)
1.5 ounces Fresca or other citrus soda (you can add more if you want to make it a less potent cocktail)
. 5 ounce Grand Marnier or Triple Sec (approximately a third of a shot glass)
Savor the beauty that is this layered margarita, then stir to blend.
Now go sit outside and enjoy the sunshine! If you’re lucky, maybe you’ll view the perfect sunset at approximately 8:34pm! Cheers!
