This was a new recipe we tried for our 4th of July gathering last year. It was such a delightful combination of berries, strawberry ice cream, and lemon curd that I decided to make it again. It’s refreshing and quite a delightful dessert. Our youngest named it Captain America Pie.
I’ve never gone wrong with a Taste of Home recipe. It’s very simple to assemble and requires no baking! I’ll copy the recipe below, but HERE is the link to the recipe.
Ingredients
- 1 pint strawberry ice cream, softened
- 1 graham cracker crust (9 inches)
- 1 cup lemon curd
- 2 cups frozen whipped topping, thawed
- 1 pint fresh strawberries, halved
Directions
- Spoon ice cream into pie crust; freeze 2 hours or until firm.
- Spread lemon curd over ice cream; top with whipped topping. Freeze, covered, 4 hours or until firm.
- Remove from freezer 10 minutes before serving. Serve with strawberries.

We have a pool party each 4th of July. If our governor doesn’t backtrack on opening California back up, we will gather as a family to celebrate independence day. I look forward to our pool party, wrapping up in a towel, and eating a piece of this pie.
