I’d love to say that I’m in the kitchen every week trying out new recipes and creating memories with my little ladies. However, trying new things and the kitchen, to me, aren’t one in the same. I’m NOT one to venture out too often. I love creating and making, but 1/2 the time it doesn’t end up how it’s supposed to look anyways.
So, I pick easy things that have a predictable outcome. Last year at Christmas (maybe it was the year before???), my sister in law made these amaze-balls cookies. So, they are on my short list. Now, just this year, I have a new one added to my recipe book too. Not, just my Pinterest crazy long “wish list” of things I’d like to do someday. I shared these easy cookies on Facebook and Instagram and people were all questioning what. they. were. Her and I were joking, (#reallynotreally) that we would have a taste test this Christmas. My initial thoughts are the ones she makes are a good, every day cookie. You can easily eat more than one. The ones I’m bringing are pretty rich and yummy. One is all it takes! lol!
So, here we go!

The second, the ones I shared and made yesterday, are from Tastes of Lizzy T’s Blog. Dang, you guys. These are better than they look in pictures!! Grab a glass of milk, and one cookies. One is ALL you need. They are rich and utterly fabulous!!
We are gifting these to grandparents, elderly neighbors and some friends this season. So far, everyone has LOVED them!! And, bonus…they are SO easy to make. And hey, if I’m saying that, they truly ARE easy lol!!
One change up I’d personally do with these cookies is make them smaller. Make them more “bite size”. For my kids, I was cutting them in half. And honestly, I would like the cookies about half the recommended size too. So, next time, that’s what I’ll be doing. Getting my smaller cookie dough scoop out!
And, when there is leftover Candiquik, you make buckeyes with the leftover peanut butter balls that are are supposed to go on top of the cookies.
Kitchen perfection in one day. Boom!

- 1 box fudge brownie mix (19.5 ounce or family size)
- ¼ cup butter, melted
- 4 oz. (1/2 block) cream cheese, softened
- 1 egg
- 1 cup powdered sugar
- 1 cup creamy peanut butter
- 4 blocks (about 4 ounces) chocolate Candiquik
- Heat oven to 350 degrees.
- In a medium bowl, beat the brownie mix, butter, cream cheese, and egg. The dough will be a little sticky. Scoop the dough onto an ungreased cookie sheet, making about 24 cookies. Smooth the edges of each to form a round cookie.
- In a separate bowl, mix the powdered sugar and the peanut butter until it is completely combined. Form the mixture into about 1 inch balls. Make sure you have one ball for each cookie. Set aside.
- Bake for the cookie dough 12 minutes, keeping an eye out to make sure the cookies doesn't over cook or undercook.
- As soon as the cookies come out of the oven, press a peanut butter ball lightly into the center of each cookie. The peanut butter mixture will soften slightly, but that is OK. Let the cookies cool for 5 minutes, then transfer them to a wire rack to cool completely.
- Melt the 4 blocks of chocolate in a microwavable bowl for 45 seconds. Stir the chocolate and melt for additional 15 seconds or until the chocolate is completely melted. (Candiquik comes in 16 ounce packages. When you open it, there are 16 blocks. Cut off 4 of these blocks for this recipe.) Spoon about ½ a tablespoon of melted chocolate on top of each cookie so it covers the peanut butter ball. Let the chocolate set. Store in an airtight container.

We liked them so much I’ve already pinned them on two boards. I’ll be sure to keep the ingredients on hand for any time short notice cookie / sweet emergency arises! Thanks.
