I love salsa. When the fam goes out to a Mexican restaurant, I might as well not even order a meal because I always fill up on chips and salsa. Now I have found some store-bought salsas that I like a lot, but none of them ever came close to that authentic salsa that I could get enough of. So I decided to try to make my own. I googled salsa recipes and tried a few that were pretty good. But then I came across one that blew them out of the water. I have made this over and over since I first discovered it and handed out the recipe to a number of friends who loved it as well. Credit for the original recipe goes to the Frugal Girls – I have tweaked theirs a bit but here is their link as well.
Ingredients ::
2 cans of Mexican-style stewed tomatoes (14.5 oz.)
1 can original Rotel (10 oz.)
1 onion chopped (red or white)
1 clove garlic, crushed
10 stems cilantro (more or less to taste), chopped
Directions ::
Combine all ingredients except for Rotel in large bowl, then transfer to blender/food processor. Blend until salsa reaches desired chunkiness (I like mine with some thickness so I don’t blend it for very long). Drain Rotel and add to salsa. Stir and enjoy!
Seriously, this recipe is so good! My new favorite thing to do is to use cucumbers instead of chips as my dipper to avoid those extra calories. So tasty and you still get that satisfying crunch!
